Hello everybody

I wrote a mission on Matera Community platform to involve the local population.

We finally fix a date : wednesday the 30th of October and a plate orecchiette tomatoe sauce and dried ricotta.

About the equipement (tables ans chairs) and the participation of AIDE as tutors for those who will make pasta : do you have any news?

Regarding the how we can cook. I understood there was a kitchen in unmonastery. Isn’t it?

About the ingredinets : flour tomatoes and ricotta, can you suggest a local factory that can give them, so that I can contact them? Or you think it would be bettere that epople bring all the ingredients ?

Hi [valentinabrogna] and you all, I’ll try to give some update and add some new questions

RECIPE: how many people will eat? Actually we’re supposed to be more or less 100 persons; if we consider at least 50 Materani (I hope there will be!) we’ve to make a prediction on the amount of ingredients, right? Let’s try to make it

FLOUR: 100 gr per person / 15 kg total (we could also consider less, it’s just a tasting) so let’s fix at least 10 kg

TOMATO SAUCE: more or less 10 kg

DRIED RICOTTA: 7 kg (I can ask for some to a friend of mine who owns a diary)

OIL, GARLIC, BASIL, WARM WATER

what about it? is it correct?

About tables and chairs the Municipality or MT2019 Committee can provide them.

The biggest issue is kitchen indeed: if weather is fine we could cook outside (now I’ve the phone number of some people that could lend camping stoves) otherwise we’ll have problems for cooking (inside it’s not possible to use those equipments for people safety). At the venue the kitchen won’t be available

A possible alternative might be to involve the High School for hotel services and catering and cook pasta in their kitchen ;-). No problem that way!

What do you think? Please, we’ve not so much time and feed 150 persons at once it’s not a joke! Ciao

I tell you in my family what happen when there is hand made pasta…we are 3 in my family + 5 about my sister family…so 8 in total…my mother made 1,5 kg of pasta, and finish each time. So i think that not 15 kg…but more than 20 kg is good like flour. About tomato i think is good measure. ricotta is too much, consider that is only like something not principal ingredienti think that 5kg is enough…this is my opinion.

Great idea, Rita! The school kitchen, is probably the best place with equipment and capacity for many.

And would we eat the pasta also at the school? Before, we had thought about the possibility of eating in a public Plaza, somewhere… Is it the Plaza near the school ?

On that project in Norway that Immaginoteca shared, the pictures of people eating at the outdoor, seem to work very good! suggestiing community communion in public space. Well, depending on the weather… a Sunny day would be perfect. Other possibility would be the school courtyard opening the doors to a public event, if bad luck brings the rain, then the party could easialy be transfered to the school cateen inside, as a plan B…

Iìll try to contact them and ask for ingredients too to Coldiretti. The School is not nearby the Venue and not in the center…mmhhh, but certainly it would be an occasion both for us and students. The use of public space, as I suggested at the beginning, strongly depends on weather so we’ve to prepare a plan B! But hey, let me contact the school and see what happens

On the MT2019 community an idea was launched: to involve the “parrocchia” behind Piazza San Francesco and see if they have a kitchen and a room since apparently they organized a “mensa” for 1000 poor people. what do you think of it?

Also, can’t Casa Netural help out on this given their experience after the BB Games? You are doing so much!

Absolutely no flour type “00”…pasta hand’s made need flour called “semola” or “semolina” in english…

And…why bread for made pasta? Maybe need after for eat tomato…

About the ingredients

15 kg flour (hard wheat flour, not farine 00) I think 15 kg should be enough :it is a little bit more that 100 gms per person (100 gms flour + some water ), thtat is to say a normal plate. Flour is the cheapest ingredients and if we have at least 50 peoples making pasta it shouln’be difficult. The more we are the more we eat!!

10 kg tomatoe sauce ok

2 lt olive olil shoud be enough

2 kg of dried ricotta should be enough (not too sure about it, I can’t figure out weight and volume)

1,5 kg bread crumbs should be enough

About the equipement let us know Rita if the school gave you a positive answer. If not what we need is two electric cooker (2 fuochi), one very big pot, another one a little smaller for the sauce and an additioal saucepan.

Just to rassure you Francesco and  we have already done pasta for 100 people.

As I said on Matera 2019 community site, I think that tomato sauce + dried ricotta is the only way we can cook our pasta. The recipe with “peperoni cruschi” and bread crumb is very tasty, but is a crazy work do it for 100 people (or more). Trust in me, I am a specialist :slight_smile:

hi guys, I’m proud to announce that finally I found the gas cookers!!! My new friends from La Martella (a small hamlet of Matera) will help us: I’ve talked them about ER, Lote and UnMon and they’re ready to lend a hand!

Any news on Wednesday time + location?

Hey everyone,

I’ve been following the discussions also on Matera 2019 community, but I can’t tell whether a time & location for the pasta party is all set and confirmed…? [Rita O], are we still on for S. Lucia al Convento? (if yes, can you please share some info and directions?) I would like the information to go in our last newsletter with infopack so people know where we all meetup for the Party. Next week most of us will already be traveling, so the sooner we let the word out the better :slight_smile: see you soon!

COOKING PASTA

dearest all, unfortunately we cannot cook pasta onsite, too many authorizations needed 'cause we will use a public building. But no worries, we’re asking to some friends living in Sassi to cook pasta for us, some kilos each. Indeed, the most amusing part is to make pasta rather than to cook. Enjoy!

Ah, i get it, for a moment I didn’t see the difference… so we will make pasta together, and than it will miraculously show up in our plates.  ping [Bembo Davies] who didn’t think food would appear “miraculously” :))

Other than that location and time stay the same? Starting at 15:00 at St. Lucia al Convento, Porta Pistola?
