Here is my everyday routine.
Checking on my stock of cheeses before the opening of the shop.
Specifically the very aged natural rind goat cheeses. They need lots of attention to keep evolving the right way.
Though itās my last year as a cheesemonger. Looking forward for my next adventures.

What do you do if they are not evolving the right way?
It doesnāt happen.
Itās my job and (ecological and ethical) duty to keep them on the good tracks.
Most of the time, itās a special command. 10 to 12 months aged cheeses are very difficult to work, and itās basically made on demand of cooks and chefs I work with.
They use them as spices and seasoning basically.

Iām moving on to become full time formative.
And of course about food, cheese specifically (techniques, technologies, history, anthropology, ecologyā¦).
So far, I already started being part time formative for the official cheesemonger CAP (professional graduation in France) but I also am in touch with design schools and anthropocene study programs for a more historical and anthropologocal approach of the cheese and milk cycle.
(and for those who I crossed path with in Essaouira, couple of years ago, this is definitely the continuation of my small journey there)

And yes my ma has fallen a few times over the past few months. She has dementia, very feeble, but good heart and lungs so is in good shape that way but only that way.
Formative is some kind of a teacher I presume, if my translation is still workingā¦

A person on ssb questioned how far North I was, since he wasnāt expecting them this North this time of the yearā¦ I get a bit of a Āµclimate from the bay of fundy keeping things a bit milderā¦
weāre spending January at my parents in the Netherlands. Itās colder and greyer than in Tbilisi for sure, and I miss my mountain house. But the little birdies in my parents yard put a smile on my face every single time - we mainly have larger birds in our yard, so itās been a nice difference.
And we try doing fun stuff with our 4-year old, which is so much easier in the Netherlands than in Georgia in terms of musea and swimming pools.
What town or city?
Last spring I visited friends in Amsterdam and enjoyed watching their daughter take her swim test. You canāt get out of primary school without passing. They want the kids to survive if they fall into a canal.
weāre in Gieten, a tiny town in Drenthe (the North). We only have a summer outdoor swimming pool, but thereās several indoor pools in the area. Iām tempted to come to the netherlands for summer so Leon can take a fast-swimming lesson course to get his certificate, I trust the instructors here more than in Tbilisi
